Adlai Recipes
Whip up delicious, homemade and guiltless meals for your entire family to enjoy. Serve adlai to accompany your favorite viands, salads and soups, or cook it as paella, porridge, or your favorite kakanin. Adlai is so much fun to work with in the kitchen.

PERFECTLY STEAMED ADLAI
Ingredients
- 1 cup adlai
- 3 cups water
Directions
- Wash the adlai (as you would wash rice) in cool, running water.
- Set aside and let it soak for 30 minutes.
- Cook it in your conventional rice cooker.
- Serve your light, fluffy and perfectly steamed adlai with your favorite viands.
Recipe makes 2 to 3 servings.
Note: The amount of water will vary depending on your rice cooker and the desired texture.

ADLAI CHAMPORADO
Ingredients
- 1 cup pre-soaked adlai
- 5 cups water
- 1/2 cup Risa 70% South Cotabato Dark Chocolate Couverture or 4-5 tablets of unsweetened tablea
- 4-5 tbsp of coconut sugar or muscovado
- Almond or Coconut Milk, optional but recommended
Directions
- Bring adlai and water to a boil.
- Lower heat to medium flame. Remove foam that collects at the surface.
- Add the chocolate or tablea and stir occasionally.
- Add more water if necessary and chocolate for desired richness.
Recipe makes 2 to 4 servings.

SLOW ROASTED BBQ PORK ADLAI PAELLA
Ingredients
- 4 cups pre-soaked adlai
- 5 cups water
- 4 cloves garlic, minced
- 1 small onion, minced
- 1 yellow capsicum, 1/2 minced and 1/2 julienned
- 300g slow-roasted bbq pork pieces
- 1 tsp ground saffron or turmeric
- Garlic salt and pepper to taste
- Add more water if necessary
Directions
- In a 12-inch paella pan, brown slow-roasted bbq pork slices with garlic, onion and yellow capsicum in olive oil to release its flavor. Set aside.
- In the same pan, bring adlai and water to a boil.
- Lower heat to medium flame.
- Add the saffron or turmeric.
- Add more water if necessary.
- Add the garlic, onion and yellow capsicum and mix with the adlai.
- Top with pork slices and yellow capsicum.
Recipe makes 6 to 8 servings.

GOLDEN FRIED ADLAI
Ingredients
- 2 cups cooked Adlai
- 4 egg yolks
- 1 tsp olive oil
- Garlic salt and pepper to taste
Directions
- In a medium bowl, combine cooked Adlai and egg yolks. Mix until each grain is coated with the egg’s color.
- Heat olive oil in a wok and add egg coated Adlai. Season with garlic salt and pepper. Garnish with fresh herbs of your choice.
- Serve with your favorite Asian viand.
Recipe makes 4-6 servings.

ADLAI SHRIMP AND SPINACH BURRITO
Ingredients
- 1 cup pre-soaked adlai
- 300g shrimps cut into pieces
- 1 can diced tomatoes
- 100g spinach
- 3 cloves garlic, minced
- 1/2 onion, minced
- 1 tsp taco seasoning
- 4 to 6 pieces soft tortilla
- Garlic salt and pepper to taste
Directions
- Cook the adlai in water with diced tomatoes, season with garlic salt and pepper.
- In a pan, saute the shrimps, garlic and onion in olive oil. Set aside.
- Heat the tortilla in a pan or griddle.
- Assemble your burrito by lining the warm tortilla with adlai, shrimps and fresh spinach. Roll and enjoy with some hot sauce and tomato salsa.
